Zusammenfassung:The coffee industry is important worldwide since this product is comercialized in high quantities and it produces several by‐products. Billions of coffee cups are consumed worldwide each day resulting in the production of large amounts of spent coffee grounds (SCG). SCG is the source of nutraceutical compounds such as phenolic compounds, melanoidins, and antioxidant dietary fiber which have been related to beneficial effects on human health, mainly gastrointestinal and cardiovascular diseases, reduction of body weight, and prevention of cancer. This chapter provides an overview of the SCG and its nutritional properties, nutraceutical composition, and potential benefits on health.
