Zusammenfassung:The paper presents the results of preclinical and clinical trials of specialized bakery products using natural ingredients, namely: for patients with diabetes mellitus of the 2nd type; for the elderly with diseases of the gastrointestinal tract and cardiovascular system; for athletes of cyclic sports. Studies established the efficiency of the developed bakery products in the diet therapy of patients with diabetes mellitus, it is recommended to use them in the nutrition of patients with diabetes mellitus of the 2nd type to reduce the glycemic index of the diet, as well as to reduce the risk of vascular and other complications of this disease. The results of clinical trials of bread for nutrition for the elderly confirmed that the developed products contribute to maintaining health and improving the quality of life of the elderly and give reason to recommend them for inclusion in the diet of the population with diseases of the cardiovascular system and gastrointestinal tract. The efficiency of the products is confirmed by the data of clinical and physiological, therapeutic indicators, improving the health of patients with diet-related diseases. The introduction to the diet of the developed bakery products for the nutrition of athletes increased the tolerance of physical exertions of laboratory animals, their stamina and working capacity.
