Zusammenfassung:Wine polyphenols have antioxidant properties. Different polyphenols have various biological activities on atherogenesis and carcinogenesis. The composition on 5 polyphenols of 16 wines of Castilla (Spain) is determined by HPLC. Polyphenols concentrations varied largely among the different wines. Most red wines had higher amounts of polyphenols than white wines. The diverse composition on polyphenols of each wine allows to suggest different biological effects.
