Zusammenfassung:There has been a gradual enhancement of ewes' milk collection activity in small dairy farms in Argentina over the last few years, linked to an increasing interest of medium scale producers to manufacture sheep cheeses on an industrial scale. The main objective of current work is to develop well-established technologies for the production of good quality ewes' milk cheeses, including cheesemaking protocols and ripening conditions, which will help in the scaling-up of the process.
