Jon Lewis: Adding Value to Campus Services

In addition to serving as president of the National Association of College & University Food Services (NACUFS), Jon Lewis is also in his second year as executive director of student auxiliary services at the University of Maine. Lewis, who is profiled, is typical of many foodservice directors today - in nearly all segments - who are taking on additional responsibilities in their facilities, sometimes in areas which are unfamiliar to them. Lewis notes that the trend toward assigning for foodservice directors expanded responsibilities will continue. He advises all directors to prepare for the inevitable.
