Evidence of the production of extracellular invertase by certain strains of yeasts

This study reports that, contrary to accepted opinion, living cells of certain yeasts are capable of producing substantial amounts of extra-cellular invertase. Different strains of Saccharomyces species differ markedly in their capacity to secrete invertase during active growth.
