Zusammenfassung: | Tannins are polyphenolic compounds widely distributed throughout the plant kingdom. Among proteins, a variety of enzyme has been reported to be inhibited by tannins and their building units. Calvatia gigantea is an edible puffball that excretes high levels of alpha -amylase when cultivated in starch liquid media containing elevated levels of tannins. The same fungus was reported to grow well on hydrolyzable and condensed tannins as sole carbon sources. These exceptional properties of C. gigantea to resist the inhibitory action of tannins during growth and alpha -amylase production made it worthy to investigate the effect of different kinds of tannins on the activity of this enzyme. |
