Pyrococcus furiosus. The enzyme primarily produces maltohexaose, maltoheptaose, and maltooctaose by hydrolyzing α-, β-, and γ-CD, respectively. This study aims to develop a high-efficiency synthesis of specific maltooligosaccharides at high-purity.
