Zusammenfassung: | The multicultural US population challenges educators to offer courses to help college students value diversity by enhancing their cultural knowledge. According to the Association of American Colleges and Universities, more than 60% of the colleges and universities they surveyed required students to take a diversity course to prepare future graduates for a multicultural society. Here, Gilboy et al discuss Cultural Experience Project (CEP), which is included in Nutrition and Culture diversity course. CEP activities include learning about religion and food symbolism, traditional health beliefs, nutrient contribution of cultural food, and the health implications of food choices of traditional cultures. |
