Zusammenfassung: | Broccoli (edible florets) are highly demanded due to its convenience and high valued nutritive and health-promoting characteristics. Modified atmosphere packaging (MAP) plays a vital role in extending shelf-life of fresh-cut produce as well as reducing food waste. However, the generation of plastic residues from packaging is a major drawback for the food industry of ready-to-eat and fresh-cut products. In order to investigate more sustainable alternatives, the present research was planned for evaluating the influence of cellulose-based packaging on the physicochemical, organoleptic and microbiological quality parameters of broccoli florets, and additionally to study the effects on the glucosinolate – myrosinase system, during postharvest storage.
Mechanical perforated cellulose-based film presented a series of advantages for packaging broccoli florets. This film maintained suitable levels of O2 (13 kPa) and CO2 (6 kPa), controlled condensation and microbial growth, and preserved the content of glucosinolates and hydroxycinnamic acids during storage (21 d at 4 °C). However, although the sensory attributes remained unaffected, broccoli florets packaged in cellulose-based film showed a significant loss in mass and firmness.
The results suggested that water loss and in-package O2 and CO2 concentration may affect the myrosinase activity and therefore exerted impact on the glucosinolate contents.
Further research is required to enhance water retention in cellulose-based packaging for potential applications with broccoli and other cut vegetables, aiming to extend their shelf-life using eco-friendly packaging materials.
