Zusammenfassung:Introduction: Polycystic ovary syndrome (PCOS) is an endocrine disorder that can be accompanied by obesity, dyslipidemia and insulin resistance. Food inadequacy is one of the factors that negatively interferes in these metabolic changes. Objective: To evaluate food consumption and the degree of processing of carbohydrate-rich foods in women with PCOS. Materials and methods: This is a cross-sectional study, in which two 24-hour recalls were applied and anthropometry was performed on 35 women with PCOS, in Natal-RN. Food and dietary consumption data were analyzed using the DietSmart 2.0 software. Food sources of carbohydrate were classified in relation to the amount of carbohydrates and fiber and their degree of processing. Results: The mean age of the participants was 27 (6.91) years, with mean anthropometric parameters demonstrating obesity and an increased risk for the development of cardiovascular diseases. The daily intake of energy, carbohydrates and dietary fiber was 1764 (480.2) kilocalories, 229 (22.4) grams and 15.88 (2.8) grams, respectively. It was observed that 66% of the carbohydrate foods consumed were processed or ultra-processed and 64.3% had a medium or high glycemic load. Conclusion: The quantitative consumption of carbohydrates was below the daily recommendation, however, most of the source foods were processed and ultra-processed and with a predominance of carbohydrates with medium or high GL, reinforcing that the quality of this macronutrient must be considered.
