Zusammenfassung:A peptidic fraction having antioxidant activity was separated from the peptic digest of mackerel pike scale collagen by ion-exchange, gel-filtration chromatography, and HPLC. Peptides obatained by SP-Sephadex C-25 chromatography of the most active fraction (SP-III) were further separated using ODS HPLC. The amino acid sequences of these peptides were Leu-His-Gln-Pro-Val-Pro-Glu (LHQPVPE) and Val-Ser-Gln-Pro-Ile-Gln-Gln-Glu (VSQPIQQE). The IC50 values of LHQPVPE and VSQPIQQE for hydroxyl radical scavenging activity were 27.3 micro M and 7.53 micro M, respectively.
