Zusammenfassung: | Hordeumvulg are dried and germinated under controlled conditions. In this study two barely lines EBYT-88-20, EBYT-88-17 used and their malt production ability measured. Combination of germination and soaking times including 24, 36, and 48hr and 3, 5, 7 days respectively to optimize process, response surface methodology by design expert software v. 6.0.2. Results revealed that increasing of soaking time from 24hr to 36hr has led to increase moisture. Increase of soaking time has cause to increase of volume. |
