Zusammenfassung:Carrageenan was extracted from a red seaweed (Eucheuma cottonii ) using a semi-refined method with potassium hydroxide solution as a protecting agent to prevent carrageenan leaching out during the extraction. The results showed that 1.5 N potassium hydroxide has a good performance as shown by measurement on the viscosity (2778.75 cps); acid insoluble ash (0.038%); gelling point (37.8 degree C); melting point (57.1 degree C); sulfate ion (19.04 ppm); 3.6 anhydrogalactose (30.28%) and ash content (17.61%). Compared to other treatments, the 1.5 N potassium hydroxide shows an excellent performance.
