Zusammenfassung:The goal of this work was to evaluate the effect of the ratio between the permeable area and the mass of produce on the quality of minimally processed Songino Valenanella locusta (L.) Laterr), packaged in a polypropylene pouches under air. The preliminary hypothesis was that the ratio surface package/product mass could influence the product quality; however, for all the indexes considered, the obtained results have shown that the product mass influences the quality decay more than the permeable package surface.
