Zusammenfassung: | Incubation of a mixture of methyl linoleate (ML) and amino acid on filter paper at 50 degree C for 3 days resulted in the Strecker degradation of the amino acid along with browning due to autoxidation of the ML. From alanine, valine, leucine, isoleucine and phenylalanine, acetaldehyde, 2-methylpropanal, 3-methylbutanal, 2-methylbutanal and phenylacetaldehyde were formed, respectively. The aldehydes yielded from known amounts of the amino acids were collected as 2,4-dinitrophenylhydrazones and determined by gas chromatography. From 89 mg of alanine, 117 mg of valine, 131 mg of leucine and 131 mg of isoleucine, 13 mu g of acetaldehyde, 68 mu g of 2-methylpropanal, 81 mu g of 3-methylbutanal and 43 mu g of 2-methylbutanal were obtained, respectively. |
