Zusammenfassung:Farmers' markets have grown in number by 63% in the past decade. Sales average $200-600 per day, and account for an important source of revenue. The markets provide important access to consumers for small and medium-sized growers, and can be established with relatively low start-up costs. Most markets are self-sustaining. In Louisiana, there were 22 operative farmers markets in 2002, offering a wide range of food products and services. Surveys of consumers and producers indicate that consumers shop at markets because of the freshness and quality of the food, as well as the shopping experience. Producers generally, thought the market experience was profitable.
