Zusammenfassung:Intolerance reactions to cereal proteins have been frequently reported in patients with allergic and gastrointestinal disease, although not all the reactions may be mediated by an immunological mechanism (e.g. coeliac disease). The isolation and chemical identification of allergens and ‘toxic fractions’ from cereal proteins is reviewed along with the current views on the mechanism of coeliac disease.
