Consumption of a Resistant Protein, Sericin, Elevates Fecal Immunoglobulin A, Mucins, and Cecal Organic Acids in Rats Fed a High-Fat Diet1,2

A HF diet causes higher fecal secondary bile acids and lower cecal organic acid production (20,21) and is thought to elevate the risk of colon cancer and ulcerative colitis (22,23). [...] we tested if consumption of sericin has a favorable effect on intestinal luminal variables, including IgA, mucins, fermentation, microflora, and secondary bile acids, in rats fed a HF diet.
