Zusammenfassung:Pectic oligosaccharides (POS) are complex fragments coming from the chemical, physical or enzymatic degradation of pectin. Many studies have been focused on pectic oligosaccharides because of the interest of their biological properties, and POS have many applications in various fields such as medicine, agriculture and agri-food industry. This paper presents the structure of pectins, the different ways of POS production with particular emphasis on the various microbial enzymes used to obtain them and the possible applications of these POS.
