Zusammenfassung: | Foodborne illnesses represent a serious health issue, with about 76 million Americans annually inflicted with an illness associated with improperly handled foods from multiple settings. Here, an abstract of a study by Sabo et al evaluating food safety knowledge of mature Kansans (aged 55 years and older) and whether a relationship existed between their knowledge and concerns while eating away from home is presented. Future food safety education of mature adults should reiterate the importance of appropriate hand drying and surface cleaning, safe food and refrigerator temperatures, proper thawing practices, and safe leftover and melon preparation. |
