Zusammenfassung:Indonesia deals with undernutrition, stunting, and wasting, all of which are caused by malnutrition. In 2018, the Ministry of Health said that 25.7% of 13-to 15-year-olds and 26.9% of 16-to 18-year-olds were undernourished and stunted. Rice is a very important part of the Indonesian diet because it is a staple food. Then, to get the nutrients that people need every day, this research purposes to increase the nutritional value of rice. Developing healthier rice varieties, such as biofortified rice and pigmented rice that are high in antioxidants, is one way to add more nutrients to rice. There were seven promising lines of rice and two check varieties tested for iron content, zinc content, and hedonic value. The study was conducted in the post-harvest laboratory of the ICRR in 2019. In general, the results showed that the promising lines of swamp rice had higher zinc levels than the check varieties. B14746E-KA-20-1-1-MR-4 and B14746E-KA-20-1-1-MR-1 showed the highest zinc content in the grain, while B14746E-KA-10-3-1-MR-1 and BP30105b-6-0-0-0-MR-9 have the highest iron content in the grain among all the genotypes. The palatability of the lines was also good and accepted by the panelists as consumer representatives.
