The present study showed that the major compounds dominating coconut oil with 70 °C drying and low-temperature pressing are dodecanoic acid, 2H-pyran-2-one, and other compounds with potential biological activity. Promising results from the above study can be the basis for developing low-temperature pressed coconut oil as functional oil.
