Zusammenfassung:Coconut oil is a source of many oleochemicals such as fatty acids, methyl esters, and fatty alcohol. The study’s general objective is to process cold-pressed coconut oil from full-fat coconut meat and identify phytocompounds of coconut oil. Oil from coconut meats was heated to 70 °C for 100 min, pressed, and filtered. Fatty acid and others compounds were analyzed using Gas Chromatography-Mass Spectra (GC-MS). The present study showed that the major compounds dominating coconut oil with 70 °C drying and low-temperature pressing are dodecanoic acid, 2H-pyran-2-one, and other compounds with potential biological activity. Promising results from the above study can be the basis for developing low-temperature pressed coconut oil as functional oil.
