Zusammenfassung: | The article describes the results of a comprehensive study of raw meat obtained from the slaughter of common ostrich bred in the domestic ostrich farm "Izborsky ostrich", beef purchased in the trade network, sand made of this raw meat dry-cured meat product type biltong. The units of analysis were: biceps muscles of silverside parts of common ostrich and beeflings, in the cooled state, after the autolysis period is completed. The prospects of using the meat of the common ostrich in the technology of dry-cured products have been proved. |
