Zusammenfassung:In western Kenya, almost 90% of pigs are sold to local pig butchers who sell pork in their butcheries. The appreciation for pork as an animal food source in the Western Province has been recognized and the number of pigs slaughtered in Kenya has been steadily rising. The purpose of this study was to describe the pig butcher enterprises in western Kenya; highlighting differences in the operational processes and challenges between rural and peri-urban settings.
