Zusammenfassung:It is shown for the first time that the dynamic light scattering (DLS) method can establish the fact of butter falsification and determine the percentage of palm fat in it. To this end, emulsions of spreads in an ethanol—water mixture are studied to determine colloidal particle (fat droplet) sizes. Using the DLS method, it is found that the colloidal particle size is unambiguously related to the palm fat percentage in butter, which makes it possible to determine the degree of replacement of milk fat with palm oil.
