Zusammenfassung:In this study, rainbow trout skin ( Oncorhynchus mykiss ) was hydrolyzed using Alcalase (HA) and Flavourzyme (HF) enzymes and bioactive peptides separated by membrane ultrafiltration method ( 30 kDa).
