Zusammenfassung:Changes in intensity of some IR and Raman bands suggest the plasticizing – antiplasticizing effects of water and glycerol contents and a small increase of amorphous/crystalline ratio, too. The nuclear magnetic relaxation data show that the amorphous/crystalline ratio depends on amylose/amylopectin mobility and also by the place of their polymer chain segments. Thus the distributions of spin-spin (T2) relaxation times and the shift toward higher values of some T2 characteristic peaks show that the increasing of water and glycerol content in the starch package materials lead to the more mobile amylose and amylopectin polymer chain segments and the prevalence of amorphous regions in the prepared native corn starch samples.
