Zusammenfassung:Nitrite plays an important role in cured by acting as a potent antioxidant and by producing the characteristic cured-meat color. A study was conducted to determine the influence of nitrite added to meat before and after cooking and after storage on the 2-thiobarbituric acid number and composition of volatiles, the products of the reaction of malondialdehyde and nitrite and the effect of pH, sulfanilamide and nitrite in a model system.
