An Electronic Imaging System for Determining Droplet Size and Dynamic Breakdown of Protein Stabilized Emulsions
A computerized imaging system was developed and evaluated for monitoring emulsion droplet size distribution and rate of emulsion droplet coalescence. The system compared favorably with electron microscopic analyses and light scattering studies.
