Zusammenfassung: | Offers in culinary tourism are developed and appear to meet the expectations of some tourists. It seems to be interesting to study the links with the sustainable tourism. We research these links through on the characteristics of local products. Indeed, these products are often purchased on vacation by culinary tourists. These products characteristic of a region, if they are a mean to promote a local cultural capital, must be identified as such by individuals. Although the literature provides some answers on what the local produce means for consumers, we have not got information about traditional production. Our study of individuals' representations provides precisions as to the particular criteria of a traditional product, and reveals that type of production contains in itself the conditions of sustainable tourism. |
