Zusammenfassung:In addition to the study of ancient and current agroecosystems, another important group of researchers has dedicated themselves to investigating ancient agriculture, domesticated and cultivated plants, in addition to maize, and races that are currently distributed throughout the country. Since the arrival of Spaniards in Mesoamerica, Old World plants entered and were incorporated into pre-Hispanic agriculture, enriching the diversity of the cornfield, the homegarden, and the food system. Current maize uses are summarized in scientific, industrial, and cultural usages that include the importance of this grass in the food system of various human populations on the planet. Cultural uses refer to maize as non-industrialized food for human and animals. Industrialized food is a phenomenon that modifies the food system and eating habits of people and animals, in addition to the cultures of peoples.
