Zusammenfassung:This paper describes the application of 1H HR-MAS NMR (high-resolution magic angle spinning nuclear magnetic resonance) to the analysis of durum wheat flours coming from geographical areas of southern Italy. It is possible to obtain one-dimensional spectra with >80 resonances. With this technique it is possible to avoid the pretreatment of the samples commonly used in other analytical techniques. Using one- and two-dimensional NMR methods, some preliminary spectral assignment were carried out. Finally, it has also been possible to apply a multivariate statistical analysis to spectral data in a trial of discriminating between the samples. Keywords: NMR; durum wheat flours; analysis
