Zusammenfassung: | Phosphate ester groups are known to link to some glucosidic residues in starch molecules. We prepared phosphoryl-oligosaccharides (POs ; calcium salt) from potato starch hydrolysates. The aim of this study was to investigate the effects of human whole saliva, collected by chewing a sugar-free gum containing POs, on enamel remineralization. Human whole saliva was collected from 6 adult volunteers by chewing xylitol gum (control) or xylitol gum containing 2.5% POs for 20 min. Demineralized bovine enamel slabs were immersed in the saliva for 20 min and immediately rinsed with deionized water. This treatment was repeated 4 times a day. After 4-d treatments, the enamel slabs were microradiographed to measure the lesion depth ld (μm) and mineral loss value AZ (vol%・μm).
