Zusammenfassung: | Shelf-life of emulsions is very much linked with the stability of the emulsifier/s being used in their preparation. Instability of the emulsifiers may be caused due to some chemical changes taking place aiithin the emulsifiBr molecules such as oxidative, hydrolytic and/or others not well defined - resulting in their degradation. The present paper highlights the importance of the two aspects and some of the findings made in our laboratory on UJ/O emulsions where the aqueous phase contained high concentration of electrolytes. |
