Zusammenfassung: | In this paper, we chose to explore the ability of dielectric techniques to access the molecular mobility and chain dynamics of biological systems via the study of various example of increasing complexity. We will show how dielectric techniques can bring information at a fundamental level, for the understanding of structure-function relationship in biopolymers and the underlying coupling of proteins and water mobility, but also its ability to check proteins integrity in biomaterials conceiving or alteration in pathologic states. |
