Zusammenfassung:The aim of this study was to investigate the functional characteristics of two-stage enzymatic hydrolysates from silky fowl feet treated with Alcalase (A), Protease N (P), and Flavorzyme (F). Three combinations, AF, PA and PF, were used. After hydrolyzing for 4 hours, the hydrolysates were lyophilized and analyzed for the soluble protein, the peptide content, UV absorption spectrum, the melanin content and the ability to inhibit tyrosinase activity. The results showed that after enzyme treatment, the soluble proteins and peptide contents of the hydrolysates were decreased and increased, respectively. This result indicates that all the enzyme combinations possess good hydrolyzing ability. All the hydrolysates had UV absorption and tyrosinase inhibitory activity (PA had the highest absorption and tyrosinase inhibitory activity). In the melanin content analysis, three hydrolysates contained about 1.92-2.32 mg/g melanin. Silky fowl feet hydrolysates have high potential to be utilized for production of the tyrosin
