Zusammenfassung: | This chapter focuses on the analytical methodology that can be used to evaluate the regulations of protected designation of origin and protected geographical indication of juices and non-alcoholic beverages.
The agricultural products needed for the preparation of juices and non-alcoholic beverages are fruits and vegetables, and therefore, this chapter offers a spectrum of analytical proposals able to link a juice with the corresponding geographical area of origin of the fruit or vegetable. The analysis of healthy components of juices is also a goal because they can give specific quality characteristics or reputation attributable to their geographical origin. The main techniques and examples of each authentication process are as follows: bilberry, apple, apricot or orange juices by chromatography (high-performance liquid chromatography/gas chromatography), pomegranate juice by infrared spectroscopy, clementine juice by multi-element fingerprinting, orange and apple juice by stable isotope ratio determination, apple juice by nuclear magnetic resonance and orange juices by semiconductor sensor array techniques. |
