Zusammenfassung: | Brazil, especially the Amazon, is rich in fruits that are consumed fresh and in other forms such as sweets and drinks. The red jambo is a fruit widely cultivated in the Amazon region, both for ornamental and food purposes, being a rich source of phytochemical compounds. The present work aimed to evaluate physical and physicochemical variables in red jambo pulp from fruits originating from the Belem campus of the Federal University of Para, in two different collection periods, in addition to applying multivariate techniques to discriminate the samples. The results showed that there were no significant differences in the variables studied according to the harvest, except for electrical conductivity values, which agreed with values in the literature and/or legislation. The multivariate analyzes applied were not able to discriminate the samples according to the fruit harvest, demonstrating that the studied variables do not suffer significant influences depending on the fruit collection period. O jambo vermelho e uma fruta muito cultivada na regia amazonica, tanto para fins ornamentais como alimenticios, sendo uma fonte rica de compostos fitoquimicos. O presente trabalho teve como objetivo avaliar variaveis fisicas e fisico-quimicas em polpas de jambo vermelho de frutos oriundos do campus de Belem da Universidade Federal do Para, em duas epocas de coleta diferentes, alem de aplicar tecnicas multivariadas na tentativa de discriminar as amostras. Os resultados mostraram nao haver diferencas significativas das variaveis estudadas de acordo com a safra, exceto valores de condutividade eletrica, sendo que eles se mostraram concordantes com valores da literatura e/ou legislacao. As analises multivariadas aplicadas nao foram capazes de discriminar as amostras de acordo com a safra dos frutos, demonstrando que as variaveis estudadas nao sofrem influencias significativas conforme o periodo de coleta dos frutos.
