Zusammenfassung:The aim of this study was to evaluate the postharvest conservation of 'Tommy Atkins' organic mango produced for exportation, harvested with (WGAP) and without (WOGAP) Good Agricultural Practices (GAP), kept under bio-organic coatings. Mango harvested at commercial maturity was coated with fennelextract (FE) at 1.5% (WGAP + FE, WOGAP + FE), with fennel extract added to cassava starch (S) at 3.0% (WGAP + FE + S, WOGAP + FE + S) and control (without coating, WGAP and WOGAP), stored at 10 ± 0.5 °C and 85 ± 2% RH. The use of GAP kept quality. Coating with FE provided poor appearance by incidence of dark spots at the skin; coating combining S + FE kept quality and delayed ripening. Index terms: Mangifera indica, good agricultural practices (GAP), cassava starch, fennel extract. O objetivo deste trabalho foi avaliar a conservacao pos-colheita de manga 'Tommy Atkins' organica destinada a exportacao, colhida com Boas Praticas Agricolas (CBP) e sem Boas Praticas Agricolas (SBP), sob recobrimentos bio-organicos. Manga colhida na maturidade comercial foi recoberta com extrato de erva-doce a 1,5% (CBP + ED, SBP + ED), com extrato de erva-doce adicionada a fecula de mandioca a 3,0% (CBP + ED + F, SBP + ED + F) e Controle (sem recobrimento, CBP e SBP), armazenada a 10 ± 0,5°C e 85 ± 2% UR. O uso de BPA manteve a qualidade. O recobrimento com ED comprometeu a aparencia da manga pela incidencia de manchas na casca; recobrimento associando F + ED manteve a qualidade e retardou o amadurecimento.
