Zusammenfassung:The aim of the present work was to evaluate the physical and chemical quality of nineteen samples of honey produced in the municipality of Pelotas /RS. It has been carried out analysis of moisture, ashes, total acidity, reducing and non-reducing sugars, hydroxymethylfurfural, electrical conductivity, Lund and Fiehe reactions. From the nineteen samples evaluated, eighteen by electrical conductivity were classified as being honeydew, nut honey, or mixture of both. In relation to other analysis, one sample was considered adulterated for presenting nonconformity in relation to humidity content, ashes, reducing sugar, Lund and Fiehe reactions confirmed by quantification of hydroxymethylfurfural. Thus, due to possible frauds, there must be more supervision from the competent institutions in terms of honey production and commercialization. The consumer should pay attention when purchasing honey in open markets and establishments where the products are commercialized without certification. KEYWORDS: Honey; Pelotas; characterization; evaluation; quality. O trabalho teve por objetivo avaliar a qualidade fisico-quimica de dezenove amostras de meis produzidas na cidade de Pelotas/RS. Foram realizadas analises de umidade, cinzas, acidez total, acucares redutores e nao redutores, hidroximetilfurfural, condutividade eletrica, reacoes de Fiehe e Lund. Das dezenove amostras avaliadas, dezoito pela determinacao da condutividade eletrica, foram classificadas como sendo mel de melato, mel de castanha ou mistura das mesmas. Em relacao as demais analises, uma amostra foi considerada adulterada por apresentar inconformidade em relacao ao teor umidade, cinzas, acucares redutores, reacao de Lund e reacao de Fiehe confirmada pela quantificacao de hidroximetilfurfural. Assim, devido a possibilidade de fraude, deve haver maior fiscalizacao dos orgaos competentes, quanto a producao e comercializacao de mel. O consumidor devera atentar-se ao adquirir mel em feiras livres e estabelecimentos onde os produtos sao comercializados sem certificacao.
