Zusammenfassung:	A novel process is described for production of 6-acyl-sucrose comprising enzymatic acylation of sucrose by an esterifying agent including an organic acid in presence of a lipase or an esterase in a solvent in which the enzyme used is stable. Chlorinated sucrose, the high intensity sweetener trichlorogalactosucrose can be prepared by chlorination and deacylation of 6-acyl sucrose prepared by the process of this invention.
