L'invention se rapporte à un appareil et un procédé de formage d'un emballage hermétiquement fermé d'une tranche d'un article alimentaire (100). Une bande de matière thermoplastique est d'abord formée en un agencement tubulaire avec un joint longitudinal hermétique. Pour former l'agencement tubulaire, on a prévu des moyens (12) destinés à plier en V une une bande continue de matière thermoplastique, et (20) à former en continu un joint hermétique le long du bord longitudinal ouvert de la bande pliée en V. Le joint hermétique est formé entre les surfaces internes des faces avant et arrière de la bande pour définir un élément de bande tubulaire. L'article alimentaire auquel on a donné la forme d'une masse molle est ensuite inséré dans l'élément tubulaire et ce dernier est aplati pour obtenir un tube de film mince.
