Zusammenfassung:	In a method of oxidising carbohydrates, particularly starch and dextrin, the oxidation is effected by molecular oxygen in an alkaline aqueous medium in the presence of a catalytic quantity of a metal ion selected from the metals of group VIII of the periodic table, copper or silver and a substance which acts as a ligand for the metal ion and is preferably constituted by a polydentate amine ligand. Procédé d'oxydation de glucides, notamment l'amidon et la dextrine, selon lequel l'oxydation est effectuée par de l'oxygène moléculaire situé dans un milieu aqueux alcalin, et en présence d'une quantité catalytique d'un ion métallique sélectionné parmi les métaux du groupe VIII du tableau périodique, de cuivre ou d'argent et d'une substance servant de ligand pour l'ion métallique et constituée de préférence d'un ligand aminé polydentate.
