Zusammenfassung:	Some aspects of the disclosure relate to processes for preparing liquid dispersions, which may comprise directing a pre-dispersion with a liquid and an oily phase through one or more filtration elements (104), and/or filtering an aqueous solution of the hydrocolloids before preparation of the pre-dispersion, and pumping the pre-dispersion into a turbulence chamber (102) and ejecting a liquid dispersion from the turbulence chamber (102) with the dispersed liquid phase having an average size of 50-220 nm, where the residence time of the pre-dispersion in the turbulence chamber (102) for each of the one or more passes through the turbulence chamber (102) is less than 10-6 seconds.
