L'invention concerne un produit végétal de type schnitzel, ledit produit comprenant un extrudat à base de protéine végétale comprenant au moins deux protéines végétales différentes ; un enrobage pané entourant l'extrudat à base de protéine végétale ; et ledit extrudat à base de protéine végétale comprenant des fibres qui sont alignées sensiblement dans la même direction et l'extrudat à base de protéine végétale étant présent sous la forme d'une seule plaque extrudée ou sous la forme d'une couche de deux ou plusieurs plaques extrudées.
