Zusammenfassung:	A slow-release water-absorbing material for an oven, a production process therefor, and an application thereof. The water absorbing material comprises raw materials of water-absorbing mineral soil having water-absorbing properties and water-retaining mineral soil having water-retaining properties; the water-absorbing mineral soil and the water-retaining mineral soil belong to food-grade materials; the water-absorbing material has the water-absorbing properties at normal temperature, the water-absorbing amount is 5-500% of the own weight, and after heating, water in the water-absorbing material is slowly released. The water-absorbing material is simple and reasonable in production process and low in production cost, has good water-absorbing properties, and can be suitable for the baking process of food to adjust the humidity of the baking environment; the absorbed water can be slowly released in a heated environment, so that safety and reliability are achieved, and the baked food has good taste; moreover, the
