L'invention concerne un procédé de fabrication de fromage à partir d'un lait de fromagerie à haute teneur en solides. Le procédé comprend l'acidification et l'emprésurage du lait de fromagerie, permettant ainsi d'obtenir un coagulum qui est découpé de façon à fournir des particules de caillé.
