La présente invention concerne des sels d'ammonium d'acides organiques partiellement fluorés, représentés par la formule générale 1. La présente invention concerne également un procédé de synthèse desdits sels ainsi que son utilisation pour la production d'émulsions stables huile-dans-eau et/ou eau-dans-huile, en tant qu'agent stabilisant dans des préparations de substitution du sang.
